Übersicht - Bratkartoffeln

Bratkartoffeln sind ein weit verbreitetes und beliebtes Gericht, das sich aus rohen oder gegarten Kartoffeln, die eventuell vom Mittagstisch übrig gebliebenen sind, zubereiten lässt. Je nach individuellem Geschmack können auch Speck, Knoblauch und Zwiebeln zu den Bratkartoffeln in die Pfanne gegeben werden. Als einzelnes Gericht sind Bratkartoffeln vielleicht etwas trocken, aber als sättigende Beilage oder mit Ei verfeinert, erfüllen sie ihren Zweck. Beim Braten ist jedoch darauf zu achten, dass man die Bratkartoffeln nicht über 120° erhitzt. Ab dieser Temperatur entsteht nämlich Acrylamid, dass für den Menschen als wahrscheinlich krebserregend eingestuft wird. Doch wenn man dies beachtet, dann muss niemand auf leckere Bratkartoffeln verzichten. Zwar brauchen die Kartoffeln dann etwas länger in der Pfanne, allerdings kann man ohne ein schlechtes Bauchgefühl essen :D
