Wenn das Öl heiß ist, schneidet man mit dem Gemüsehobel die Kartoffeln in die Pfanne. Man merkt wann das Öl heiß ist, wenn man einen Kochlöffel oder Pfannenwender aus Holz nimmt, diesen in das Öl hält...

Eimasse vorbereiten
Ca. 5 Minuten bevor die Kartoffeln und die Zwiebeln durch sind, sollten man in einer Schüssel die Eier aufschlagen und verrühren....

Nun nochmal die Pfanne gut ausfetten, dabei besonders darauf achten, dass der Innenrand der Pfanne genug 'Schmiermittel' hat. Die Tortillamasse in die Pfanne geben und auf mittlere Hitze backen lassen...

Wenn die Kartoffeln und Zwiebeln durch sind, gibt man das Ganze zu der Eimasse in der Schüsssel. Anschließend noch mit Salz und Pfeffer abschmecken. Wer es ein wenig schärfer mag, kann auch gerne noch ein wenig Chili hinzugeben. Die Tortillamass gut durchrühren und kurz einziehen lassen.
